Can IPhone be used as iPod?

I have an original iPhone. As a phone, it no longer meets my needs, as I can't get a bluetooth headset to work reliably with it and I'm reading about tons of problems with bluetooth and iPhones.

From what I've read, the newer iPhones are no better with bluetooth.

I'm shopping for a new phone now. Can I give up my phone service on my iPhone and continue to use it as an iPod and internet device? Do I keep the SIM card in it or do I pull it?
