If you have imported split stereo files (e.g. from protools) universal track mode off may give you better and more familiar control of them. Personally, I hate it, and would never go there. I would go to the trouble of making interleaved versions of the files, and turning UTM on.
With UTM on, of course you can create stereo auxes. If they are not already stereo when you create them, just click on the mode button on the bottom left of your bus or aux strip, and presto. The massive advantage of UTM is that you aren't forever dealing with 2 tracks at a time when really, they are 2 parts of a whole. Last time I was in pro tools land (PT 5) it was a constant pain to me, not to mention how much redundant space it took up on the screen, and forever having to use 2 plugs when 1 should do. Things may have changed since then, but I have never been tempted to find out. And if you MUST have individual control of each side of an interleaved file, you can paste another copy of it alongside the first, and using the same mode switch, choose left only for one, and right only for the other.
