Yes, of course, but the fact that you ask may indicate that you have not made a backup in a while. Do it now!

Also be aware that if you have any DRM-protected tracks that you purchased from the iTunes Store, they are unplayable in anything other than iTunes. If you uninstall iTunes you cannot use those tracks until you reinstall.
