The older ones (both the original models with DVI and the 2009 Unibodies with the minidisplay port) certainly can, either using something like the appropriate
"Matrox" twin head or triple head modules and the requisite cable adaptors, or by connecting one through the computers own video port and another through a video card attached to the Firewire , USB, or, where relevant, expresscard port.
I'm sure the new models are able to as well. It is certainly not a capability you would expect to see removed.
