Welcome to the discussions,
to save the apps to your computer, transfer your purchases. To do so, disable autosync in iTunes, connect your ipod, right click on it in the device list and choose "transfer purchases". After that you could back up manually the same way, choosing "backup", but this would replace the last working backup you made. So I would suggest restoring it "as new ipod" and sync the apps back from iTunes, you will lose your game data, but at least be sure that no corrupt files where copied back.
But before you start, did you already reset your ipod by holding the sleep and home button until the Apple logo comes up again? This might clear difficulties after installing new apps.

Not sure what changed, but I have not had the issue for the last 5 syncs. I did perform some unusual steps to get to where I am. Again I am not sure what made the difference, but below are the steps that I performed for anyone else's reference.
1. Connected iPod, it again froze on Verifying Ipod and Syncing Ipod.
+Note: These messages were displayed on the information display on iTunes. You would have to click the 'Play' icon on the left side of the message to toggle to each message.+
2. I toggled to the Sync message and click on the 'X' icon on the right side of the message. This stopped all syncing/verifying.
3. I clicked the 'Sync' button on the bottom right of the iPod screen in iTunes. This manually launches sync. From some reason I do not get the Verifying iPod message. Not sure this is because it is not performing this function. I am going to guess that is correct as I can successfully sync the iPod at this point.
4. I had to perform this work around three more times during my testing. Since then I have downloaded more free apps and I have not had an issue since.
If I were to take a guess as to what might have caused the issue, maybe downloading several apps (10+) on the iPod and then trying to sync it. Unsure. If I have additional information I will definately update this post.
