Prevent iTunes from opening

How do I prevent iTunes from opening when double-clicking mp4-files?
I only found a way (open with - other...) to prevent certain files from opening. I rather want QuickTime to open when double clicking on mp4 files.

MacPro 2.8, Mac OS X (10.6.1), iTunes 9

Open a Finder window with an MP4 file.
Right click - open with.
Select Other...
In the window, tick *Always Open With* and select QuickTime Player.

Thank you Chris for your hint.

I found this solution:
right-click the file -> get info -> open with -> ... -> change all
This uses the chosen application to open ALL documents like this one (not only the one which is defined to "open with...")
