When I try to open a resume template it is in a foreign language. In fact any template is in a foreign language. What is weird I also have office 2008 installed and all of its templates are in a foreign language as well. Any suggestion on what setting needs to be set in pages or in osx?
Ok I get why they do it, but can I have pages present it in English. I don't plan on writing my resume in Latin and even though I have no intention of plagiarizing a generic resume, it is just helpful to have the example in my own native tongue.

No. The whole point of using a placeholder is to not have it in anyone's native language. If someone were to use "English" for this purpose rather than Latin, it would still be nonsense text, not an example of resume text.
You can tell Apple you want it done differently here:
You missed the point, jedicpa. You replace the placeholder text with whichever text in whichever language you like. The placeholder text is only tho show how a document will look like with text and not just show a blank page.
