Disable Autocorrect for bilinguals

Hey there, I am in love with my new iPad, but I speak and write several languages and because of autocrrect in Mail it is impossible to answer my emails in Danish and German. Every time I write something it automatically changes into something similar looking in English making the whole text complete unreadable in either languages.

Does anybody know how to disable autocorrect?

Please know that I need to write in all languages for my work.
