Recently my iPod touch 3rd gen has started running slow. Safari tAkes an unusually long time to respond to commands. I have tried restartig it several times and removed most of my apps so that now I only have 5 apps installed. I installed the latest update but it hasn't helped. It also hangs on the boot screen sometimes. For example the screen will show the apple logo and make the unlock sound but won't show the actual unlocking screen for about 30 seconds after the sound was made, during time it is not on the lock screen it is stuck on the apple logo screen.
How about trying a RESTORE on your iPod Touch? Please keep in mind that this will erase all your music, videos and apps from your iPod Touch and return it to the original factory state. You can then install your music, videos and apps after the restore is complete. See if that works and improves things.

If it is still appears to be responding slower than expected then I would recommend taking to an Apple Store for service inquiry. Now I am suspecting it is hardware related.
My 2 week old 64gb model had just over 8mb ( yup mega NOT giga!) free and I'm telling you it's a bad bad place to be. It took like 15 minutes no kiddin for it to
bring up my music library after clicking the icon. Music went AWOL etc etc.
After deleting some content leavin around 1gb free all was sound as a pound!
I think the original poster stated that he RESTORED the iPod so that would delete all of installed data such as music, videos and photos etc... so I am thinking space would not be an issue anymore.
