DVD Issues - Interlacing And Aspect Ratio

Just finished a wedding video for friends which I promised to have to them by Saturday.

When I created the DVD using iDVD, my masterpiece had bad interlacing issues, and small black bars at the top and bottom even though it was shot 4:3 and the DVD project was 4:3...this also made it look a bit squished?

*Additional info*

FCP Sequence settings:
-NTSC DV

Export Settings:
-Quicktime Conversion
-Uncompressed 10bit 422
-720x480 (although when I look at the movie properties in quicktime it says 640x480)
-Used this export setting because it seemed to be the only one that preserved the quality of my moving stills with text on top

Any ideas?

Mac Pro 2 x 2.8GHz Quad Core Intel Zeon, 6GB Ram, Mac OS X (10.5.8), Final Cut Pro 7.0.1
