One of the ways to enter notes via the piano roll, first cmd-click in the actual software instrument track to create and empty region. Then open the track editor>piano roll and you can now hold down the cmd button (the cursor will change to a little pencil icon) and using your mouse choose the spot to enter your note.

no (unless you can find a "chorded instrument" somewhere online, they do exist, but they're not very plentiful)

they're not very flexible. i remember playing with a guitar once, i think it had 8 major chords and 8 minor chords (instead of notes) that was it.

GB may not be the right software for you, i'm afraid

Yes. Just use the track editor > piano roll. Its easy as pie to create chords, shift, copy and paste, lengthen notes, change velocity etc.
