I don't believe you can delete any of the apps that came with your iPad, so it must still be there. Do you have more than 11 pages of apps? Have you tried to use the Spotlight search to find and launch "Notes"?
You can always go to Settings > General > Reset, then tap Reset Home Screen Layout. This will place the original app icons back to their original positions, followed by 3rd party apps in alphabetical order.
Thank you very much for your thoughtful, clear, precise instructions. I found notes tucked away, hidden on the tenth page of apps! As soon as I read your response, I remembered when I first attempted to delete it that it is not allowed. So, I proceeded to hide it--and then forgot where!

Thank you, Jim, for your thoughtful and civil response--others might have stomped on me for being so naive. Any way, I was disappointed that iOS4 did not release for the iPad the same time it did for the iPhone and iPod Touch. I am using it on my iPod Touch and the syncing features are much better, along with the folder features.
Is there a trick to getting iPad and iTunes to recognize touch notes this is giving me the fits.
I had some problems with this, too. As I remember, I went into iTunes when syncing with the iPad or iPod Touch and checked/selected Info, Sync Notes Info for the device being synced. Also, make sure on all your devices you want Notes to be synced to, that you select in Settings, Mail, Contacts, Calendar in your MobileMe account make sure that Notes is also selected. I think this will get notes appearing in all your devices. Finally, make sure Notes is selected in your MobileMe Preferences on your desktop/laptop computers.
