I don’t want to share pics on my iPhone with my iPad. My grandchildren use my iPad and it’s signed in with my Apple id

Go into the settings, tap on your name (at the top, that accesses your apple ID and iCLous settings) and turn off iCloud sharing for photos.

That should keep them from syncing between devices
