Hi,
I was recently given an apple laptop for work. i setup my gmail account to run through Mail also, however my concern is that the administrator can see my personal gmails via the work server. Is this possible or does the gmail account remain local to my laptop?
any education on this area would be much appreciated.

Your company should have told you that you use their networks at the company's discretion, there should be no expectation of privacy, and any activities are subject to inspection by them.

That said, from a practical perspective, it is really hard for them to do much beyond looking to see that, based on the sites you surf to, you are not looking at pørn sites all day.
Your email can be read by anyone from the sender, to Google's email servers, to intermediate nodes along the route. Email is not a secure messaging system. There are ways to securely email between parties but in normal use email is not secure.
Ask your company IT folks how they handle personal use of their computing and network resources.
To encrypt individual emails, you and your correspondent(s) each need a certificate.
Its private key is used for encrypting (or simply Signing, which is like adding a secure checksum to ensure the contents have not been changed in transit). It Public key is used by each correspondent to decrypt or verify the messages you send came from you and/or have not been changed in Transit.
With this in place, your messages can not be modified if signed, and cannot be read if intercepted or audited by anyone in between.

• You can make yourself an email certificate using tools already on your Mac.
• You can obtain a certificate for free from Letsencrypt.com (backed by the Electronic Frontier Foundation).
