CarPlay does not recognize my car that has CarPlay abilities. My vehicle is a Jeep Cherokee 2017 and I just recently updated to IOS 12.1.2 on my phone? Is there a firmware update for CarPlay? I've heard that there is an update from 1.56 to 1.68, if that is true, how can I get it?

Because the OP specifically referenced a Connect firmware update (1.5.6 to 1.6.8) that came from the car company not from Apple. If you are in the same boat make sure you have the latest firmware on your vehicle.
Contact your Jeep dealer. That would come from them, not Apple.
Why would it be Uconnects fault when Apple released the firmware which caused the issue?
