I’m setting up my new phone and my son is using my old phone. How can I have it so the 2 phones are not sharing info such as photos. I want to be able to delete and add photos and not have them on both devices

Follow the steps in this article. That will make it your son's phone. Then create a new ID for him using his name and account details. If he is under 13 years old, set up Family sharing, and create a child's ID for him.
