Follow the steps in this article. That will make it your son's phone. Then create a new ID for him using his name and account details. If he is under 13 years old, set up Family sharing, and create a child's ID for him.

You have to create a separate Apple ID for you son.
Do I have to completely clear/reset the phone to do this? I just tried creating a new one and it changed my ID on my new phone as well
