After downloading the Windows April 2018 64-bit iso file, opening bootcamp and selecting the partitions for the SSD it downloads the Windows support software and subsequently begins to partition the SSD however before its done an error pops up saying it cannot be partitioned. I have a 2018 MacBook Pro running the latest version of Mojave.

Post the output of
sudo fsck_apfs -n -l /dev/rdisk1
I suggest erasing the whole internal disk (not just Macintosh HD), restoring the backup, and retrying BC Assistant.
As a test, try to create a FAT partition of the size you want Windows to be, and report any errors?
Got this after attempting MS-DOS (FAT) partition of less than 30 gb.
This is what BC Assistant also gets. Do you have a backup of macOS via Time Machine?
Yes just backed it up.
Should I change the format to Mac OS Extended or keep APFS?
The restore should make it APFS.
