I tried clicking and un-clicking the "sync over wifi" option in settings, and nothing.
I unauthorised and authorised my laptop, still nothing.
I don't know why it's happening, and would appreciate any help!

I have exactly the same problem on both of my Macs ( Mac mini 2011 and MacBook Pro 2018 ) both with 10.14.2.
iTunes doesn't detect the iPhone or iPad over the network.
If the Macs are connected by ethernet on the same network (wifi disabled or disconnected), they are able to detect and synchronies with my iDevices…
To recap:
Mac to iPhone (by wifi) : not working
Mac to iPhone (ethernet : Mac ---ethernet-----> Router ---wifi----> iPhone / iPad) : it work great

If you mean were the devices connected to power while I was syncing them wirelessly, I have tried both ways, it didn't make a difference.
I am using a MacBook Pro, with Mac OS Mojave 10.14.2 (but it hasn't been syncing wirelessly since I updated to Mojave a few months ago)
Are your devices connected to power?
Are you using Windows or Mac, what version?
Ipad and Iphone will not sync over wifi on itunes
