I am trying to update my apple watch but the update has been 'downloading' on my phone for three days. It keeps saying 'only 30 minutes left' 'only 2 hours left' but it just continues downloading! I'm so frustrated because I thought it would help to restart the watch and just do pairing again but it won't pair without the new update so I can't use it at all. Apple won't let me do online chat since my warranty is out so I'm stuck with no fix.

On the phone have you tried going to settings>general>reset> and reset the network settings? Is the watch on the charger?
If it is still downloading and no progress and been made than than I would cancel the update and try again.
Try restarting the watch and try updating again.

If necessary reset/erase and watch and try again. As part of the Pairing process the watch should go through a update.
The internet connection and/or wifi to your phone sounds painfully slow, but something is still happening. By the time you read this it might have completed and be moving into verification and upload to the watch, but I strongly recommend you don't crash out of it by restarting your watch if it has gone beyond download to the iPhone, because this can cause bad things happen. I know it is inconvenient and frustrating, but the best plan of action is to let it continue until it either works or gives you a failure notification.
The watch is on the charger but still won't update :( . when you say reset the settings do you mean for the watch? because i think i've done that
