How do I uninstall Itunes?

Macbook pro early 2011 High Sierra with iTunes 12.7.4.80.

I wanted to restore my iPhone 6.

I cannot restore iPhone until iTunes is updated to 12.8

My Mac says there are no updates available, we all know there are.

3 hours spent on chat (mostly waiting for some one who might know an answer) came to nought.

The link update they sent always downloaded as damaged file.

Interesting my neighbours MacBook late 2012 says the same thing when he tried to update?

WTF is going on? any enlightening options would be appreciated.

If I hadn't been on holidays I would have stabbed myself in the eye with a screwdriver by now :)
