I have an iPhone SE and an iPhone 6S. I am switching from AT&T to TMobile. When I take out the AT&T SIM card and put in the TMobile SIM and activate it, does that erase anything on my phone? (i.e. contacts, text messages, notes, voicemails, call history etc.)

No. The SIM card doesn't contain any information on your phone apart from your phone number. Everything else is either stored on your phone or iCloud. If you're still concerned, you can always back up everything to iCloud (https://support.apple.com/en-gb/HT203977).
