I have an iPhone 7 Plus with 12.12 I believe. Just did the latest update. I’ve tried everything!! I can TYPE to Siri but that’s it!! I was thinking maybe I should try the new app for Siri!? Maybe have to go to the Apple store!? Please help with any suggestions!! Thanks!
Test your front facing microphone that is responsible for Siri.
Launch Camera app and record a front facing video. Is the sound okay?
If it's not, this is why Siri doesn't hear you.
You can try to resolve your issue restoring iPhone via iTunes. Restore your iPhone, iPad, or iPod to factory settings - Apple Support
If this doesn't resolve your issue, then you have to schedule an appointment at Genius Bar or an Authorized Service Provider.

Just a thought is the switch on the left hand side of you phone showing red? If so turn so no red is showing. Ta

I have all that on. But can’t get past the set up for Hey Siri!! It won’t record me. Or can’t hear me I guess. Thanks so much for your help tho. I appreciate your time.
Mute/Unmute modes do not affect "Hey, Siri" in any way.
How would I restore it? Do I back up everything to iTunes and then reset my phone?? Not too sure. Thanks! 😁

Voice memo is using an another mic. You have a problem with a front facing microphone which is hiding underneath the speaker grill.
Try to restore it first. And if this doesn't help, then go to Apple.
