I have the same issue, too. I turn off my iPhone every night so I am not disturbed during my bedtime. I want to see the actual time the messages (SMS, MMS and iMessages---in other words, all text messages---they all should have the same "rules" for date and time. Dates and times shouldn't change, regardless of the type of message) were sent. Not when they were received by the server or my iPhone, but when they were sent. For example, I received two messages this morning when I turned on my iPhone at 6:30 AM and these messages' timestamps were 6:31 AM, not 10:55 PM and 10:58 PM the night before when they were actually sent. I would think that this wouldn't be an issue, but apparently, it is. I went into my iPhone's settings and "reset" the "set automatically" for date-and-time setting, but it had no effect. I think this is actually a flaw in the iPhone program or code. I also "refreshed" the time zone (which was annoyingly set to "Cupertino" time... not cute! And I couldn't purge my time zone's history from my previous travels---yet another program flaw. I shouldn't have to go back into a different setting to "refresh", and really, that method really doesn't work) but that didn't have any effect, too. Apple, please fix this and have the timestamp reflect when the messages were sent from the sender.
To put this issue in a more lifelike situation, imagine getting a bill in the mail (snail mail/postal mail) and it's time-stamped the day you get it, not the day it was sent. If there was a weather delay that caused your bill to arrive two weeks late, you cannot argue that with the billing company because---there's no proof of when it was sent! You can only prove when you got it, which was two weeks after the date it was sent, but how can you know when it was sent if there's no date on it? How can you know it was sent two weeks ago? So instead of paying a $50 bill, you have to pay a $200 bill. Not fun!
