iPhone 8 plus my system memory seems unbelievably high - help!? 53GB seems excessive.

Not necessarily.

"System" is not the iOS operating system itself, but represents deleted data on the device's flash that hasn't been overwritten yet. iOS does this to prevent unnecessary "wear" on the NAND RAM chips.
