My iPhone camera struggles to focus sometimes as well. I find that cleaning the lens with a lint-free cloth usually does the trick.

As for uncontrollable shaking, that could suggest a more major issue with your device camera. I'd suggest you Contact Apple Support and book an appointment at your local Genius Bar and they can investigate the issue further there.
