It sounds like the download or installation may be pausing; is that correct? I have a link with some great troubleshooting steps for this type of issue. Try these as a starting point: Get help with over-the-air iOS updates.
If you find the issue persists, you can try updating using iTunes also: Update your iPhone, iPad, or iPod touch.
