Is this the only way?

I don't want to enter my address to the Apple ID sign in, but is this the only way to sign up and download apps that can be useful and fun to play with on Apple, iOS, and Mac?

I have an iPhone 5s, and I would just like to know.

You can use any email address you want as your Apple ID. If you prefer to keep your personal email address private, then create a Gmail or Yahoo email account to use strictly for Apple.
