The option "Set Automatically" on Date & Time is always turned on. I cannot turn it off if I want. The option shows disabled. How could I make it work again?

Settings > Screen Time > Remove Screen Time Passcode.
Come Back to this Date & Time. Hurray!! Change what ever you want and
If need be you can put the passcode for Screen Time.

The change was made in part to prevent children from bypassing screen time restrictions placed on their devices by their parents by changing the time/date to get more app and internet use than they were supposed to have.
Wow, I would never think that this was related to Screen Time passcode. Thanks a lot
