Text Message Contacts
When I put in a name to text to, not all of their phone numbers appear. Sometimes only their email address is an option. I know all the information is included in their contact.

Are your contacts being synced from a third party account such as Gmail or Yahoo? You can check by navigating to Settings>Contacts and checking for the default account. If it's not iCloud, this can cause issues.
