Is it possible to let Apple block my stolen MacBook Pro for any further updates and support if I provide the serial number ?

Apple does not get involved in allegations of theft of its products.
AS CT suggested, read that article which urges you to take certain steps, including contacting local Law Enforcement.

I just figured that it would be a great discouragement to potential thieves if it were possible to block a stolen device from Apple service, updates etcetera.
Obviously, such a claim should be backed by a formal police report, stating the serial number of the product.
It would be an administrative nightmare to do what you are suggesting. Does your TV manufacturer track stolen TVs? Does your car manufacturer track stolen cars? Does your camera manufacturer track stolen cameras? Are you willing to pay a premium for your computer to support the infrastructure that would be necessary to perform such a service?
And how would Apple handle the false reports of theft? Would you be happy if you brought your computer in for service and Apple confiscated it because someone erroneously or maliciously reported it stolen?
There is a service, the police, who deal with theft. And there is insurance that would pay for a replacement if your computer was stolen.
