Don't think that's possible. Outside of specific apps like Youtube that support Google's Cast, there is no way to mirror to a roku as it does not support AirPlay Mirroring which the Apple products use to wirelessly mirror their screen.

You can use the Roku App to send content to the Roku device from the iPhone such as photos or videos from the camera roll but that's it.

There is no real way to screen mirror to a Roku from Apple devices.
