How do I remove books from collections in Books?

Since the recent update from iBooks to Books, I've lost the ability to remove books from collections and am currently only able to work around it by making a new collection excluding the single book I want to remove and deleting the old collection. It's not ideal.

Deleting books from iBooks How to delete books from iBooks iCloud which have been previously downloaded? I don't want to just hide them, as I downloaded most of them at the age of 14 and no longer wish to have them anywhere in iCloud. This issue is seriously keeping me from using the product.
