Maybe I'm just not looking in the right place, but I can't find what operating system is on the iPad Pro 10.5 inch. Help?

That's the iOS version currently running on your device.

A new iPad will most likely be running iOS 12.1.X

Any new iPad you purchase will come with at least iOS 12 and the most current version is iOS 12.1.4
