Apple School Manager "Email" Field Pulling from Unexpected Location in PowerSchool

We have been using Apple School Manager for quite sometime and after updating the plugin in early 2019 our student's "email" field is pulling data from a new field in PowerSchool. We recently we noticed that all student accounts have updated to their "Guardian_email" From PowerSchool, instead of a field we have for their school email address. What I find most interesting about this, is that there is no option to choose which fields are included or excluded, so how did this happen? Before updating the plugin, it would always pull the student's email address from PowerSchool and not their Guardian's Email.

I inspected the inside of the "Apple School Manager" plugin for PowerSchool and noticed that it is making a query for "psm_studentcontact.email" which would actually indicate that the plugin is functioning correctly on the PowerSchool side. My confusion is that before January of this year, my Data in Apple School Manager held a different value and I have NOT changed or updated anything in PowerSchool.

My question to the community would be the following:

"Why did Apple School Manager suddenly decide to pull from a new field?"

"If the field value was always the same, then where WAS it pulling the old data from?"
