Can I use an apple iTunes gift card to purchase things in games (like gems, etc.)?

Yes. Once you redeem it to your Apple account, the balance will be applied to any iTunes or iOS App Store purchases first. Once you make a purchase that exceeds the remaining balance it will use the remaining balance, then apply any amount not covered by charging the rest to your regular iTunes payment method.
