Since I updated to Sierra, InDesign CS5 crashes regularly, repeatedly, when I add pages to the document. Sometimes I can add one at a time. Sometimes I can add 20 pages to the end. Other times, it just keeps crashing. Drives me nuts! I have installed the legacy Java as recommended. I have dumped Preferences. Nothing fixes it.

Try setting up another admin user account to see if the same problem continues. Please post back on whether or not this worked. Also try the Safe Mode. Please post back on whether or not this worked.
Isolating an issue by using another user account
If it works in the Safe Mode, try running this program when booted normally and then copy and paste the output in a reply. The program was created by Etresoft, a frequent contributor. Please use copy and paste as screen shots can be hard to read. Click “Share Report” button in the toolbar, select “Copy to Clipboard” and then paste into a reply. This will show what is running on your computer. No personal information is shown.

If you still have your CS5 install disk and serial number, you could try uninstalling it (there should be an Adobe uninstaller in your InDeisgn folder somewhere: I’m away from my desktop Mac so can’t check right now); then reinstalling it.
Contact Adobe for support of their products.
Adobe doesn't support CS5 any longer, I was told.
Then you're probably going to have to upgrade to a supported version.
Take a closer look at Affinity Publisher. Its still in open beta, but due out this year, and may offer you a low-cost, and effective, non-subscription alternative to InDesign CS5.
Safe Mode didn't make any difference on the problem. I set up a new Admin account, but then I realized I will have to reinstall the software under that login.
It may not help, but try running/posting the Etrecheck report.
