When I have changed my phone operator, my iPhone X doesn't catch the signal from wi-fi to 4G.

Has you new operator switch on your data? You need to call them to set you up.

Since, (as I can understand) it was working fine with your previous carrier, did you talk to your new carrier explaining that problem? What did they say?
