Sometimes when I plug my iPhone 7 into my truck CarPlay activates and pops-up right away. But perhaps 30% of the time no matter how many times I unplug and replug it doesn’t come up. I have to go to settings on my dashboard and remove the device and then add it back again and then it activates immediately. Pain in the butt.

Try going into Settings > General > CarPlay .
Then select your vehicle (this may be something different from the actual name of the vehicle), then turn on the switch beside the label that says “Allow CarPlay While Locked”. If you are still getting issues, I would go into that menu and hit Reset in the top right of the screen and try to pair again. If you are still getting issues, it may either be a bug on Apple’s end or an issue with your manufacturer’s system. I would contact your vehicle manufacturer first and check if this is a common issue with your specific model of vehicle before contacting official Apple Support.
