When does remaining disk space affect performance?

I have 120GB of free space remaining on a 1TB internal SSD. I have a plan to reduce size, but I'd like to know at what point does my dwindling space start to affect performance?

That would depend on what tasks you want it to do entirely. If all you do is to email and browse the internet, 15 GB empty space will do nicely (just make sure you have at least that much at all times). However, if you are into editing and rendering video/graphics, then you need much more. It is recommended that you maintain at least as much empty space as you have temporary files in your project for the rendering process to proceed properly. I can easily amass 50 - 150 GB of temp. files in a one hour HD project (which I will archive or delete when done with the project).

Many years ago when I used Windows, it was always the case (or at least felt like it was) that as a hard drive got more full, performance went down. I haven’t experienced that yet on a MacBook Pro. Assuming I don’t max out a hard drive and all else stays the same, in theory, performance should remain the same?
