I’ve seen the Apple Watch Series 3 offered in the gold color on amazon, but not on the apple website. Is the series 3 watch available in gold/rose gold?
Apple has one in its refurbished store.
Being refurbished by Apple, it does have a full 1 year warranty and has gone through an extensive and strict refurbishment process, which guarantees a fully functional watch which should be indistinguishable from new.
Apple did sell the series 3 in gold when it originally released it. When it released the series 4 in September, it discontinued the gold version of the series 3.
Any gold series 3 watches you see on Amazon or other retailers are just old stock from when it was available.
Being old stock, and since warranty starts when the device is bought from Apple or an authorized reseller, the warranty may have expired already, or at the very least be much less than the full year at this point since Amazon is not an authorized reseller.

The Apple Watch 3 was initially offered in a gold colour, but has been discontinued. Any you see being sold elsewhere will be older models.
