Mouse Lag using 2 HDMI Monitors

Just replaced two old Benq Monitors (2013) with their new DesignView 27 PD2700U-B. Unless I scale the resolution down on the 2 externals to 1280 x 720 I get significant mouse lag.

What can I do to get normal mouse tracking back on the two new monitors while still using at least 2560 x 1440 resolution?

"Legacy" display interfaces such as HDMI continue to provide the "Heartbeat" refresh. The entire screen data are re-sent at the 60Hz or whatever you are able to achieve over HDMI. This means the display interface is completely full of data NOT NEEDED by your high-quality display, which has its own screen buffer.

You should switch to a DisplayPort family interface. Those displays feature both the Mini and the Full size DisplayPort inputs, which are a subset easily obtained from ThunderBolt with an inexpensive adapter. Be sure to get ones sold as "4K" capable. This will allow updates to get to the display sooner, and the entire setup will run cooler.

If you are not using these displays for Movies, be sure to use the On-Screen display controls in the display itself to turn off the smoothing. I believe these displays call that feature "Animation mode".
