Make my icloud email address my primary mail address

I need to change my primary email address from my previous telco service provider to my icloud email address, as the previous telco provider cannot supply landline/broadband facilities to the new area I have recently moved to. At the moment, whenever I send an email, the default email address is my old one, and I have to remember to change it before I send the message. How do I do this please? My iMac is currently running Mojave 10.14.3. I also have an iPad and iPhone; all 3 are synchronised.

This is the process for changing the email address which forms your Apple ID from a non-Apple address to your @icloud.com address:

Firstly, sign out of iCloud on all your devices: go to each of your devices and sign out in System Preferences (or Settings)>iCloud - 'Sign out' on a Mac, 'Delete this account' on an iOS device (this will not delete the account from the server). If you have 'Find My iPhone' etc enabled you will need to disable it first. Your synced data will disappear from your devices but will reappear when you sign back in.
Go to http://appleid.apple.com and click 'Manage your Apple ID'. Sign in with the current ID.
Where it says 'Apple ID' and gives your current ID email address, click 'Change your Apple ID'.
Enter your @icloud.com and click 'Save changes'
Sign back into iCloud on all your devices with the new ID and password. Your synced data will reappear (give it time).

I reiterate - before you start, sign out of iCloud on all your devices. Failure to do this will lead you into difficulties.

OK: the following information applies to the Mail application on Mavericks; later systems may be a bit different. From the 'Mail' menu choose 'Preferences': select the 'Composing' tab. Use the drop-down menu I've flagged in the image below to select the address you want to send from.

Well it is. I don't want to change it. It seems a very complicated and unnecessary way of changing one of my email addresses to be the default. I'm sure it wasn't a problem in Windows. All I want to do is have another email address show up as my default address whenever I open MAIL to send a message. Surely there must be a simpler way. Apple originally used to pride itself in being "intuitive". It sure ain't now!
