Need to find a way to change the icons smaller, really don’t like how large the icons are so large and completely take over the screen.

Do you have Zoom turned on? Settings > General > Accessibility > If Zoom is on, Turn it Off

Try this: Settings > Display & Brightness > Is Display Zoom set on Zoomed?
Icon sizes can only be changed with zoom either ON or OFF.
There's no other option.

On my MacBook Pro it was a simple setting but can’t find it on my iPad
Argh! This is really basic stuff, I don’t see why it’s restricted, o’well I can live with it on the iPad I guess.
