With this new update, I’m not longer able to send cash to a friend through text message. I have an AMEX credit card that I use for everyday purposes connected to Apple Pay. Is this because of the update and only available for debit cards now? Confused.

Going back to the original question, yes it is not working because AMEX is not a debit card. You will need to add your debit card from your bank to send money to friends using Apple Pay Cash.
That wasn’t helpful. But thank you. I had already looked at nearly every “help” info prior to posting on here. Even went to google. However, I did just get an email from Apple Pay Cash that explained what I was suspecting. I’ll attach a screenshot. I’ll also attach a screenshot of what I’d see when I tried to send cash. From that screen when I would “add card”, it would state that card was already in wallet. Anyway. Problem solved. Not happy with the outcome. I don’t use a debit card. :/
