Apple Pay
I used to be able to send my landlord my rent via Apple Pay which was tied to my credit card. Now, it will only let me send my rent when it’s linked to a debit card. Am I doing something wrong and if not, why the change?

You aren't doing anything wrong. Credit cards can no longer be used. See: Send, receive, and request money with Apple Pay - Apple Support
