When I want to start my game again can I delete it cuz it says if you delete the game you will delete it’s data so when it’s delete it do I have to wait a couple of days to start the game from scratch

If you delete the game as you were advised, you will lose your game data. Just stop playing the game and do something else, then return to the game to finish when you want.
