I'm trying to understand how much memory I can upgrade in my MacPro... information I've found states max memory 8GB... but I'm not sure if that's TOTAL (4GB per slot) or 8GB per slot, creating 16GB total...

The maximum RAM for a late 2011 MacBook Pro is 16GB total, but Apple didn't test it with more than 8GB prior to release.
There are no 2011 desktop Mac Pro models.
