Apple Watch Analog Faces

No, Apple does not allow third-party watch faces.

I do not understand your question, only in that the current set of watch faces includes several analog faces that do not, either have a digital time display, or the digital time complication can be changed to something else or nothing.

Have you tried customizing your analog watch face of choice?

Either deep press your watch face and customize, or use the iPhone “Watch“ app to customize the face. Or maybe in the Watch app select a different face from the gallery tab at the bottom of the app display.
