There is no way to block all spam. Phishing mail is just another type of spam. That in bold text is probably why you're getting spammed. Opening/reading them is a sure way to tell the spammers you read everything in your mailbox. You're exactly what they're after, someone who opens everything that lands in their mailbox.

I think by default iOS Mail app opens the item you tap. Whether or not it triggers a confirmation (trap) set by the spammers depends on your settings. I think spammers have all sort of tricks to check when their mail is opened. Reporting spam usually achieves the opposite result, the person who reports it gets spammed more because they open the mail. FYI (I know this is different but) unsubscribing spam guarantees you'll be spammed heavily. I get very little spam in all of my email addresses and almost 0 phishing mail. Anyway, the bottom line is you can never block all phishing mail or spam.
