iPhone 8. Text messages from known people in my contacts are coming in as unknown and I can't send a reply. Huh???

Are these messages SMS text messages (green) or iMessages (blue)?

SMS messages are sent/received through your cellular carrier. Contact them for issues.
iMessages may have issues if you have some international prefix missing, or some regional telephone number improperly accounted for.

I guess they are iMessages (blue). When I take off the country code in contacts it shows identity. Don't really want to do that for every contact.

If you have this available in Settings:

Settings > Phone > Dial Assist

Consider using that instead of explicitly setting the country code in Contacts.
